Delish Low Sugar Gluten Free Double Chocolate Cake
We experimented with a low sugar chocolate cake for a friend, and it turned out far better than I expected--I'd take this cake to a party. Rich and chocolatey, very cakey but just sweet enough. Here's the recipe for you to try!
Low-Sugar Chocolate Cake
¼ cup light-brown granulated sugar
2 cups gluten free cake flour blend
½ cup unsweetened cocoa powder
1 ½ tsp baking powder
1 ½ tsp baking soda
1 tsp salt
¾ cup mashed ripe banana
2 large eggs
1 cup milk
½ cup vegetable oil
1 ½ tsp vanilla extract
¼ cup boiling water (more or less depending on cake consistency)
Grease and flour two 8-inch cake pans. Heat oven to 180 degrees.
Mix dry ingredients. Mix wet ingredients for two minutes on medium speed in mixer. Blend all. Pour into cake pans.
Bake 35 minutes.
Low-Sugar Choco Whipped Cream Cheese Frosting/Filling
100 g cream cheese (ish), cold
1 tbsp powdered sugar
¼ cup unsweetened cocoa
200 ml heavy cream, cold
1/2 teaspoon vanilla extract
Place the cream cheese (cold), cocoa, and powdered sugar in a large bowl and beat on medium-low speed until smooth. Turn the mixer down to medium-low speed and pour the heavy cream down the side of the bowl in a slow and steady stream, stopping every now and then to scrape the bottom and sides of the bowl.
When all the cream has been added, turn the mixer up to medium-high and whip until the frosting holds stiff peaks. Fold in the vanilla extract.
